Malvani Style Chicken Koliwada Biryani

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, finely chopped
  • 2 tbsp ginger-garlic paste
  • 1/4 cup Malvani masala
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup mint leaves, chopped
  • 4 green chilies, slit
  • 1/2 cup fried onions
  • 1/4 cup ghee
  • 1/4 cup oil
  • 1 tsp turmeric powder
  • Salt to taste
  • 4 cups water

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. In a bowl, marinate the chicken pieces with yogurt, ginger-garlic paste, Malvani masala, turmeric powder, salt, and half of the chopped coriander and mint leaves. Let it marinate for 1 hour.
  3. In a large pot, heat ghee and oil. Add the sliced onions and sauté until golden brown.
  4. Add the marinated chicken and cook until the chicken is half done.
  5. Layer the partially cooked chicken with the soaked basmati rice. Sprinkle the remaining coriander and mint leaves, green chilies, and fried onions on top.
  6. Pour water over the rice, cover the pot, and cook on low heat until the rice and chicken are fully cooked and the moisture is absorbed.
  7. Gently fluff the biryani with a fork and serve hot.
