Malvani Style Chicken Koliwada Biryani
Malvani Style Chicken Koliwada Biryani is a flavorful and aromatic dish from the Malvani cuisine, known for its bold flavors and rich spices. This biryani is a perfect combination of tender chicken pieces and fragrant rice, cooked to perfection with a blend of traditional Malvani spices.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 tomatoes, finely chopped
- 2 tbsp ginger-garlic paste
- 1/4 cup Malvani masala
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup mint leaves, chopped
- 4 green chilies, slit
- 1/2 cup fried onions
- 1/4 cup ghee
- 1/4 cup oil
- 1 tsp turmeric powder
- Salt to taste
- 4 cups water
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- In a bowl, marinate the chicken pieces with yogurt, ginger-garlic paste, Malvani masala, turmeric powder, salt, and half of the chopped coriander and mint leaves. Let it marinate for 1 hour.
- In a large pot, heat ghee and oil. Add the sliced onions and sauté until golden brown.
- Add the marinated chicken and cook until the chicken is half done.
- Layer the partially cooked chicken with the soaked basmati rice. Sprinkle the remaining coriander and mint leaves, green chilies, and fried onions on top.
- Pour water over the rice, cover the pot, and cook on low heat until the rice and chicken are fully cooked and the moisture is absorbed.
- Gently fluff the biryani with a fork and serve hot.
