Malvani Style Chicken Pulao
Malvani Style Chicken Pulao is a flavorful and aromatic rice dish from the Malvani cuisine, known for its bold and spicy flavors. This dish is a perfect combination of tender chicken pieces and fragrant rice, cooked with a blend of Malvani spices and coconut milk.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 cup coconut milk
- 2 onions, thinly sliced
- 2 tomatoes, chopped
- 3-4 green chilies, slit
- 1-inch ginger, grated
- 4-5 garlic cloves, minced
- 1 tsp cumin seeds
- 1 cinnamon stick
- 4-5 cloves
- 2-3 green cardamom pods
- 1 bay leaf
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- Heat oil in a large pot or deep pan. Add cumin seeds, cinnamon stick, cloves, cardamom pods, and bay leaf. Sauté until fragrant.
- Add sliced onions and sauté until golden brown.
- Now add grated ginger and minced garlic. Sauté for a minute.
- Add the chicken pieces and cook until they are no longer pink.
- Stir in the chopped tomatoes and green chilies. Cook until the tomatoes are soft.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Pour in the coconut milk and bring the mixture to a gentle boil.
- Stir in the soaked rice and garam masala. Add 3 cups of water and bring to a boil.
- Cover the pot with a lid and simmer for 15-20 minutes, or until the rice is cooked and the chicken is tender.
- Garnish with fresh coriander leaves and serve hot.
