Malvani Style Chicken Pulao

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 cup coconut milk
  • 2 onions, thinly sliced
  • 2 tomatoes, chopped
  • 3-4 green chilies, slit
  • 1-inch ginger, grated
  • 4-5 garlic cloves, minced
  • 1 tsp cumin seeds
  • 1 cinnamon stick
  • 4-5 cloves
  • 2-3 green cardamom pods
  • 1 bay leaf
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. Heat oil in a large pot or deep pan. Add cumin seeds, cinnamon stick, cloves, cardamom pods, and bay leaf. Sauté until fragrant.
  3. Add sliced onions and sauté until golden brown.
  4. Now add grated ginger and minced garlic. Sauté for a minute.
  5. Add the chicken pieces and cook until they are no longer pink.
  6. Stir in the chopped tomatoes and green chilies. Cook until the tomatoes are soft.
  7. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  8. Pour in the coconut milk and bring the mixture to a gentle boil.
  9. Stir in the soaked rice and garam masala. Add 3 cups of water and bring to a boil.
  10. Cover the pot with a lid and simmer for 15-20 minutes, or until the rice is cooked and the chicken is tender.
  11. Garnish with fresh coriander leaves and serve hot.
