Malvani Style Chicken Sukka Pulao
Malvani Style Chicken Sukka Pulao is a delicious and aromatic rice dish from the Malvani cuisine of the Konkan region in Maharashtra, India. This flavorful pulao is made with succulent pieces of chicken cooked with fragrant spices and mixed with rice to create a mouthwatering one-pot meal.
Ingredients
- 1 kg chicken, cut into pieces
- 2 cups basmati rice, soaked for 30 minutes and drained
- 1 large onion, finely sliced
- 1 tomato, finely chopped
- 1/4 cup Malvani masala
- 1/4 cup grated coconut
- 1/4 cup chopped coriander leaves
- 4-5 cloves garlic, minced
- 1-inch ginger, grated
- 4-5 green chilies, slit
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 2 tablespoons ghee
- 4 cups water
- Salt to taste
Instructions
- Heat ghee in a large pot or pressure cooker. Add sliced onions and sauté until golden brown.
- Add minced garlic, grated ginger, and green chilies. Sauté for 2-3 minutes.
- Add the chicken pieces and cook until they turn golden brown.
- Stir in the chopped tomatoes, Malvani masala, turmeric powder, red chili powder, and salt. Cook for 5-6 minutes.
- Add the soaked and drained rice to the pot. Mix well to coat the rice with the spices.
- Pour in the water and bring to a boil. Cover and cook until the rice and chicken are fully cooked.
- Garnish with grated coconut and chopped coriander leaves. Serve hot.
