Ingredients
- 2 cups all-purpose flour
- 1 teaspoon active dry yeast
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1 cup warm water
- 1 cup crumbled feta cheese
- 1 cup chopped spinach
- 1/2 cup shredded mozzarella cheese
- 1/4 cup olive oil
- 1/2 teaspoon ground sumac (optional)
Instructions
- In a large bowl, mix the flour, yeast, sugar, and salt. Gradually add the warm water and knead the dough until smooth. Cover and let it rise for 1 hour.
- Preheat the stovetop griddle or a large skillet over medium heat.
- In a separate bowl, combine the feta cheese, spinach, mozzarella cheese, and olive oil.
- Divide the dough into 4 equal portions. Roll out each portion into a thin circle.
- Spread the cheese and spinach mixture evenly over each circle of dough. Sprinkle with sumac if desired.
- Cook each flatbread on the preheated griddle for 3-4 minutes on each side, until golden brown and crispy.
