Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/4 cup ice water
- 1 1/2 cups Manchego cheese, shredded
- 3 large apples, peeled, cored, and thinly sliced
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine the flour, granulated sugar, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer the dough to the prepared baking sheet.
- Sprinkle the shredded Manchego cheese over the dough, leaving a 2-inch border around the edges.
- In a large bowl, toss the sliced apples with the brown sugar and cinnamon. Arrange the apple slices over the cheese.
- Fold the edges of the dough over the filling, pleating as needed. Brush the edges of the dough with the beaten egg.
- Bake for 35-40 minutes, or until the crust is golden and the apples are tender. Allow the crostata to cool slightly before serving.
