Ingredients

  • 8 oz macaroni pasta
  • 1 tbsp olive oil
  • 8 oz Spanish chorizo, sliced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 8 oz Manchego cheese, shredded
  • Salt and pepper to taste
  • 1/4 cup panko breadcrumbs
  • 2 tbsp chopped fresh parsley

Instructions

  1. Boil the macaroni pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced chorizo and cook until crispy. Remove from the skillet and set aside.
