Ingredients
- 8 oz macaroni pasta
- 1 tbsp olive oil
- 8 oz Spanish chorizo, sliced
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups whole milk
- 8 oz Manchego cheese, shredded
- Salt and pepper to taste
- 1/4 cup panko breadcrumbs
- 2 tbsp chopped fresh parsley
Instructions
- Boil the macaroni pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced chorizo and cook until crispy. Remove from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
- Gradually whisk in the milk and cook until the sauce thickens.
- Stir in the shredded Manchego cheese until melted and smooth. Season with salt and pepper.
- Add the cooked macaroni and crispy chorizo to the cheese sauce, stirring to combine.
- Transfer the mac and cheese mixture to a baking dish. Sprinkle with panko breadcrumbs and bake in a preheated oven at 375°F for 15 minutes, or until golden and bubbly.
- Remove from the oven and garnish with chopped parsley before serving.
