Ingredients
- 4 large baking potatoes
- 1 cup grated Manchego cheese
- 1/2 cup diced chorizo sausage
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub the potatoes and prick them with a fork. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.
- While the potatoes are baking, cook the chorizo in a skillet over medium heat until browned and crispy. Remove from the heat and set aside.
