Manchow Noodles
Manchow Noodles is a popular Indo-Chinese dish that combines the flavors of Indian and Chinese cuisine. It is a spicy and flavorful noodle dish that is perfect for a quick and delicious meal.
Ingredients
- 200g noodles
- 2 tbsp oil
- 1 onion, finely chopped
- 1/2 cup mixed vegetables (carrots, bell peppers, cabbage)
- 3-4 cloves garlic, minced
- 1-inch ginger, finely chopped
- 2-3 green chilies, finely chopped
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 1 tbsp red chili sauce
- 1 tbsp tomato ketchup
- 1/2 tsp black pepper powder
- Salt to taste
- 4 cups vegetable stock
- 2 tbsp cornflour mixed with 4 tbsp water
- 2 spring onions, finely chopped
Instructions
- Boil the noodles according to package instructions. Drain and set aside.
- Heat oil in a wok or large pan. Add the chopped onion, garlic, ginger, and green chilies. Sauté until the onions are translucent.
- Add the mixed vegetables and stir-fry for 2-3 minutes.
- Next, add the soy sauce, vinegar, red chili sauce, tomato ketchup, black pepper powder, and salt. Mix well.
- Pour in the vegetable stock and bring it to a boil.
- Stir in the cornflour mixture to thicken the sauce.
- Add the boiled noodles and toss everything together until well combined.
- Garnish with chopped spring onions and serve hot.
