Manchow Noodles

Ingredients

  • 200g noodles
  • 2 tbsp oil
  • 1 onion, finely chopped
  • 1/2 cup mixed vegetables (carrots, bell peppers, cabbage)
  • 3-4 cloves garlic, minced
  • 1-inch ginger, finely chopped
  • 2-3 green chilies, finely chopped
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tbsp red chili sauce
  • 1 tbsp tomato ketchup
  • 1/2 tsp black pepper powder
  • Salt to taste
  • 4 cups vegetable stock
  • 2 tbsp cornflour mixed with 4 tbsp water
  • 2 spring onions, finely chopped

Instructions

  1. Boil the noodles according to package instructions. Drain and set aside.
  2. Heat oil in a wok or large pan. Add the chopped onion, garlic, ginger, and green chilies. Sauté until the onions are translucent.
  3. Add the mixed vegetables and stir-fry for 2-3 minutes.
  4. Next, add the soy sauce, vinegar, red chili sauce, tomato ketchup, black pepper powder, and salt. Mix well.
  5. Pour in the vegetable stock and bring it to a boil.
  6. Stir in the cornflour mixture to thicken the sauce.
  7. Add the boiled noodles and toss everything together until well combined.
  8. Garnish with chopped spring onions and serve hot.
