Ingredients

  • 1/2 cup finely chopped mixed vegetables (carrots, cabbage, bell peppers)
  • 1/4 cup finely chopped spring onions
  • 2-3 cloves garlic, minced
  • 1-inch ginger, finely chopped
  • 2-3 green chilies, finely chopped
  • 1/4 cup cooked noodles
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tbsp red chili sauce
  • 1 tbsp cornflour mixed with 1/4 cup water
  • 4 cups vegetable stock
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp oil

Instructions

  1. Heat oil in a pan and sauté garlic, ginger, and green chilies.
  2. Add mixed vegetables and spring onions, and stir-fry for a few minutes.
  3. Pour in the vegetable stock and bring it to a boil.
  4. Add soy sauce, vinegar, red chili sauce, salt, and pepper.
  5. Stir in the cornflour mixture to thicken the soup.
  6. Add cooked noodles and simmer for a few minutes.
  7. Manchow Soup is ready to be served hot.
