Manchow Soup

Ingredients
- 1/2 cup finely chopped mixed vegetables (carrots, cabbage, bell peppers)
- 1/4 cup finely chopped spring onions
- 2-3 cloves garlic, minced
- 1-inch ginger, finely chopped
- 2-3 green chilies, finely chopped
- 1/4 cup cooked noodles
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 1 tbsp red chili sauce
- 1 tbsp cornflour mixed with 1/4 cup water
- 4 cups vegetable stock
- Salt to taste
- Black pepper to taste
- 2 tbsp oil
Instructions
- Heat oil in a pan and sauté garlic, ginger, and green chilies.
- Add mixed vegetables and spring onions, and stir-fry for a few minutes.
- Pour in the vegetable stock and bring it to a boil.
- Add soy sauce, vinegar, red chili sauce, salt, and pepper.
- Stir in the cornflour mixture to thicken the soup.
- Add cooked noodles and simmer for a few minutes.
- Manchow Soup is ready to be served hot.
