Ingredients

  • 500g chicken breast, cut into bite-sized pieces
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1/4 cup tomato ketchup
  • 2 tablespoons soy sauce
  • 2 tablespoons vinegar
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Heat vegetable oil in a pan over medium heat.
  2. Season the chicken pieces with salt and pepper, then fry until golden brown. Remove and set aside.
  3. In the same pan, sauté the garlic, onion, and bell pepper until fragrant.
  4. In a bowl, mix together the tomato ketchup, soy sauce, vinegar, sugar, cornstarch, and water.
  5. Pour the sauce mixture into the pan and bring to a simmer until the sauce thickens.
  6. Add the fried chicken back into the pan and toss to coat with the sauce.
  7. Adjust seasoning with salt and pepper if needed.
