Mandalay Htamin Jin (mongolian-style Lamb Stir Fry)

Ingredients

  • 1 lb lamb, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 1/4 cup green onions, chopped

Instructions

  1. Heat 1 tablespoon of oil in a large skillet over high heat. Add the lamb and stir-fry until browned. Remove the lamb from the skillet and set aside.
  2. Heat the remaining 1 tablespoon of oil in the same skillet. Add the onion and garlic, and stir-fry for 2 minutes.
  3. Add the red and green bell peppers to the skillet and stir-fry for an additional 3 minutes.
  4. Return the lamb to the skillet. Add the soy sauce, oyster sauce, sugar, and black pepper. Stir-fry for another 2-3 minutes, until the lamb is cooked through and the vegetables are tender-crisp.
  5. Sprinkle with chopped green onions before serving.
