Mandazi

Ingredients
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 cup coconut milk
- 1/2 cup water
- Oil for frying
Instructions
- In a large bowl, mix together the flour, sugar, baking powder, salt, cinnamon, and cardamom.
- Add the coconut milk and water to the dry ingredients and mix until a dough forms.
- On a floured surface, knead the dough for about 5 minutes until smooth.
- Divide the dough into 12 equal portions and shape each portion into a ball, then flatten into a disc shape.
- Heat the oil in a deep pan over medium heat.
- Fry the mandazi in batches for about 3-4 minutes on each side until golden brown.
- Remove the mandazi from the oil and place on a paper towel to drain excess oil.
- Serve warm and enjoy!
