Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 cup coconut milk
  • 1/2 cup water
  • Oil for frying

Instructions

  1. In a large bowl, mix together the flour, sugar, baking powder, salt, cinnamon, and cardamom.
  2. Add the coconut milk and water to the dry ingredients and mix until a dough forms.
  3. On a floured surface, knead the dough for about 5 minutes until smooth.
  4. Divide the dough into 12 equal portions and shape each portion into a ball, then flatten into a disc shape.
  5. Heat the oil in a deep pan over medium heat.
  6. Fry the mandazi in batches for about 3-4 minutes on each side until golden brown.
  7. Remove the mandazi from the oil and place on a paper towel to drain excess oil.
  8. Serve warm and enjoy!
