Mandazi Magic

Ingredients
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/4 cup coconut milk
- 1/2 cup water
- Oil for deep frying
Instructions
- In a large bowl, mix the flour, sugar, cardamom, salt, and baking powder.
- Add the coconut milk and water to the dry ingredients and mix until a soft dough forms.
- On a floured surface, roll out the dough to about 1/4 inch thickness and cut into desired shapes.
- Heat the oil in a deep pan and fry the mandazis until golden brown on both sides.
- Remove from the oil and drain on paper towels.
- Serve the mandazis warm with tea or coffee.
