Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup coconut milk
  • 1/2 cup water
  • Oil for deep frying

Instructions

  1. In a large bowl, mix the flour, sugar, cardamom, salt, and baking powder.
  2. Add the coconut milk and water to the dry ingredients and mix until a soft dough forms.
  3. On a floured surface, roll out the dough to about 1/4 inch thickness and cut into desired shapes.
  4. Heat the oil in a deep pan and fry the mandazis until golden brown on both sides.
  5. Remove from the oil and drain on paper towels.
  6. Serve the mandazis warm with tea or coffee.
