Mandi (aleppo-style Spiced Rice With Chicken)
Mandi is a traditional Syrian dish that features spiced rice and tender chicken, cooked to perfection. This Aleppo-style version of Mandi is packed with flavor and is sure to become a family favorite.
Ingredients
- 2 cups basmati rice
- 4 chicken thighs
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 tablespoons Mandi spice mix
- 4 cups chicken broth
- 1/4 cup ghee or butter
- Salt to taste
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
- In a large pot, melt the ghee over medium heat. Add the sliced onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the chicken thighs to the pot and brown them on all sides.
- Sprinkle the Mandi spice mix over the chicken and onions, then pour in the chicken broth. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
- Remove the chicken from the pot and set aside. Add the rinsed rice to the pot, season with salt, and stir to combine. Place the chicken thighs on top of the rice.
- Cover the pot and cook for an additional 20-25 minutes, or until the rice is tender and the chicken is cooked through.
- Fluff the rice with a fork and serve the Mandi hot, with the chicken on top.
