Mandi Ayam Ala Arab, also known as Arabian Style Chicken Mandi, is a traditional Middle Eastern dish that is popular in Indonesian Arab Cuisine. This flavorful and aromatic dish is made with tender chicken and fragrant rice, cooked to perfection with a blend of spices.
Ingredients
- 1 whole chicken, cut into pieces
- 2 cups basmati rice
- 3 onions, sliced
- 4 cloves garlic, minced
- 2 tomatoes, chopped
- 4 tablespoons mandi spice mix
- 1/4 cup olive oil
- 4 cups chicken broth
- Salt to taste
- Water
Instructions
- Start by marinating the chicken pieces with half of the mandi spice mix, salt, and 2 tablespoons of olive oil. Let it sit for at least 30 minutes.
- In a large pot, heat the remaining olive oil and sauté the onions and garlic until fragrant.
- Add the marinated chicken pieces and cook until they are browned on all sides.
- Stir in the remaining mandi spice mix and add the chopped tomatoes. Cook for a few minutes until the tomatoes are softened.
- Add the basmati rice to the pot and stir to coat the rice with the spices and oil.
- Pour in the chicken broth and enough water to cover the rice by about an inch. Bring to a boil, then reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes until the rice is cooked and the chicken is tender.
- Once done, fluff the rice with a fork and serve the Mandi Ayam hot.
