Ingredients

  • 1 whole chicken, cut into pieces
  • 2 cups basmati rice
  • 3 onions, sliced
  • 4 cloves garlic, minced
  • 2 tomatoes, chopped
  • 4 tablespoons mandi spice mix
  • 1/4 cup olive oil
  • 4 cups chicken broth
  • Salt to taste
  • Water

Instructions

  1. Start by marinating the chicken pieces with half of the mandi spice mix, salt, and 2 tablespoons of olive oil. Let it sit for at least 30 minutes.
  2. In a large pot, heat the remaining olive oil and sauté the onions and garlic until fragrant.
  3. Add the marinated chicken pieces and cook until they are browned on all sides.
  4. Stir in the remaining mandi spice mix and add the chopped tomatoes. Cook for a few minutes until the tomatoes are softened.
  5. Add the basmati rice to the pot and stir to coat the rice with the spices and oil.
  6. Pour in the chicken broth and enough water to cover the rice by about an inch. Bring to a boil, then reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes until the rice is cooked and the chicken is tender.
  7. Once done, fluff the rice with a fork and serve the Mandi Ayam hot.
