Ingredients

  • 2 cups basmati rice
  • 1 whole chicken, cut into pieces

  • 2 tomatoes, chopped
  • 2 tablespoons mandi spice mix
  • 1/4 cup olive oil
  • 4 cups chicken broth
  • 1/4 cup raisins (optional)
  • 1/4 cup slivered almonds (optional)
  • Salt to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until golden brown.
  2. Add the chicken pieces and cook until browned on all sides.
  3. Stir in the mandi spice mix and cook for 2 minutes to release the flavors.
  4. Add the tomatoes, raisins, and almonds (if using), and cook for another 5 minutes.

  7. Once done, fluff the rice with a fork and arrange the chicken pieces on top.
