Ingredients
- 2 cups basmati rice
- 1 whole chicken, cut into pieces
- 2 onions, thinly sliced
- 4 cloves garlic, minced
- 2 tomatoes, chopped
- 2 tablespoons mandi spice mix
- 1/4 cup olive oil
- 4 cups chicken broth
- 1/4 cup raisins (optional)
- 1/4 cup slivered almonds (optional)
- Salt to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until golden brown.
- Add the chicken pieces and cook until browned on all sides.
- Stir in the mandi spice mix and cook for 2 minutes to release the flavors.
- Add the tomatoes, raisins, and almonds (if using), and cook for another 5 minutes.
- Stir in the basmati rice and chicken broth. Season with salt to taste.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, or until the rice is tender and the chicken is cooked through.
- Once done, fluff the rice with a fork and arrange the chicken pieces on top.
- Serve the Mandi Ayam hot, garnished with additional almonds and raisins if desired.
