Ingredients
- 2 lbs chicken, cut into pieces
- 2 cups basmati rice
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 2 tablespoons mandi spice mix
- 1/4 cup ghee
- 4 cups chicken broth
- Salt to taste
Instructions
- Start by marinating the chicken pieces with mandi spice mix and set aside for 30 minutes.
- In a large pot, heat the ghee over medium heat and sauté the onions and garlic until golden brown.
- Add the marinated chicken pieces to the pot and cook until browned on all sides.
- Add the basmati rice to the pot and stir to combine with the chicken and onions.
- Pour in the chicken broth, season with salt, and bring to a boil.
- Reduce the heat to low, cover the pot, and let the mandi simmer for 30-40 minutes, or until the rice is cooked and the chicken is tender.
- Once done, fluff the rice with a fork and serve the mandi hot.
