Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 cups basmati rice
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons mandi spice mix
  • 1/4 cup ghee
  • 4 cups chicken broth
  • Salt to taste

Instructions

  1. Start by marinating the chicken pieces with mandi spice mix and set aside for 30 minutes.
  2. In a large pot, heat the ghee over medium heat and sauté the onions and garlic until golden brown.
  3. Add the marinated chicken pieces to the pot and cook until browned on all sides.
  4. Add the basmati rice to the pot and stir to combine with the chicken and onions.
  5. Pour in the chicken broth, season with salt, and bring to a boil.
  6. Reduce the heat to low, cover the pot, and let the mandi simmer for 30-40 minutes, or until the rice is cooked and the chicken is tender.
  7. Once done, fluff the rice with a fork and serve the mandi hot.
