Ingredients

  • 2 cups basmati rice
  • 1 pound beef, cut into cubes
  • 1 onion, sliced
  • 2 carrots, diced
  • 1 bell pepper, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons mandi spice mix
  • 4 cups chicken broth
  • 1/4 cup vegetable oil
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the beef cubes and brown them on all sides.
  3. Remove the beef from the pot and set aside.
  4. In the same pot, sauté the onions, carrots, bell pepper, and garlic until softened.
  5. Add the mandi spice mix and stir to coat the vegetables.
  6. Return the beef to the pot and add the basmati rice, stirring to combine everything.
  7. Pour in the chicken broth and season with salt.
  8. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes until the rice is cooked and the beef is tender.
  9. Fluff the rice with a fork and serve the mandi hot.
