Mandi (omani Spiced Rice With Chicken)
Mandi is a traditional Omani dish of spiced rice and tender chicken, slow-cooked to perfection. This flavorful and aromatic dish is a staple in Omani cuisine, and it's perfect for sharing with family and friends.
Ingredients
- 2 cups basmati rice
- 1 whole chicken, cut into pieces
- 2 onions, sliced
- 4 cloves garlic, minced
- 2 tablespoons Mandi spice mix
- 1/4 cup vegetable oil
- 4 cups chicken broth
- 1/4 cup raisins (optional)
- Salt to taste
Instructions
- Wash the rice and soak it in water for 30 minutes. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until golden brown.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the minced garlic and Mandi spice mix, and cook for 2 minutes.
- Add the soaked rice to the pot and stir to combine with the chicken and spices.
- Pour in the chicken broth and season with salt. Bring to a boil, then reduce the heat to low, cover the pot, and simmer for 30 minutes.
- If using, sprinkle the raisins over the rice during the last 5 minutes of cooking.
- Once the rice is cooked and the chicken is tender, remove from heat and let it rest for 10 minutes before serving.
