Mandi (omani Spiced Rice With Chicken)

Ingredients

  • 2 cups basmati rice
  • 1 whole chicken, cut into pieces
  • 2 onions, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons Mandi spice mix
  • 1/4 cup vegetable oil
  • 4 cups chicken broth
  • 1/4 cup raisins (optional)
  • Salt to taste

Instructions

  1. Wash the rice and soak it in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until golden brown.
  3. Add the chicken pieces to the pot and cook until browned on all sides.
  4. Stir in the minced garlic and Mandi spice mix, and cook for 2 minutes.
  5. Add the soaked rice to the pot and stir to combine with the chicken and spices.
  6. Pour in the chicken broth and season with salt. Bring to a boil, then reduce the heat to low, cover the pot, and simmer for 30 minutes.
  7. If using, sprinkle the raisins over the rice during the last 5 minutes of cooking.
  8. Once the rice is cooked and the chicken is tender, remove from heat and let it rest for 10 minutes before serving.
