Mandi (omani Spiced Rice With Chicken And Nuts)

Ingredients

  • 2 cups basmati rice
  • 4 chicken leg quarters
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons Mandi spice mix
  • 1/4 cup mixed nuts (almonds, cashews, and pistachios)
  • 4 cups chicken broth
  • 2 tablespoons ghee or butter
  • Salt to taste

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes.
  2. In a large pot, heat the ghee or butter over medium heat and sauté the sliced onion and minced garlic until golden brown.
  3. Add the chicken leg quarters to the pot and brown them on all sides.
  4. Stir in the Mandi spice mix and salt, then add the soaked rice and mixed nuts. Pour in the chicken broth and bring to a boil.
  5. Reduce the heat to low, cover the pot, and let the Mandi simmer for 30-40 minutes, or until the rice is cooked and the chicken is tender.
  6. Once done, fluff the rice with a fork and serve the Mandi hot, garnished with additional nuts if desired.
