Ingredients
- 2 cups basmati rice
- 4 chicken leg quarters
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 tablespoons Mandi spice mix
- 1/4 cup mixed nuts (almonds, cashews, and pistachios)
- 4 cups chicken broth
- 2 tablespoons ghee or butter
- Salt to taste
Instructions
- Wash the basmati rice and soak it in water for 30 minutes.
- In a large pot, heat the ghee or butter over medium heat and sauté the sliced onion and minced garlic until golden brown.
- Add the chicken leg quarters to the pot and brown them on all sides.
- Stir in the Mandi spice mix and salt, then add the soaked rice and mixed nuts. Pour in the chicken broth and bring to a boil.
- Reduce the heat to low, cover the pot, and let the Mandi simmer for 30-40 minutes, or until the rice is cooked and the chicken is tender.
- Once done, fluff the rice with a fork and serve the Mandi hot, garnished with additional nuts if desired.
