Mandi (omani Spiced Rice With Lamb)

Ingredients

  • 2 cups basmati rice
  • 1.5 lbs lamb, cut into pieces
  • 2 onions, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons Mandi spice mix
  • 1/4 cup ghee
  • 4 cups chicken broth
  • Salt to taste

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat the ghee over medium heat. Add the sliced onions and cook until golden brown.
  3. Add the minced garlic and Mandi spice mix to the pot, and cook for 2 minutes.
  4. Add the lamb pieces to the pot and brown them on all sides.
  5. Pour in the chicken broth and bring to a boil. Reduce the heat, cover, and simmer for 1.5 hours until the lamb is tender.
  6. Remove the lamb from the pot and set aside. Strain the broth and reserve it for cooking the rice.
  7. In a separate pot, bring the strained broth to a boil. Add the soaked rice and salt, then cover and cook over low heat for 20 minutes.
  8. Arrange the cooked lamb pieces on top of the rice, cover, and let it steam for an additional 10 minutes.
  9. Fluff the rice with a fork and serve the Mandi hot.
