Mandi (omani Spiced Rice With Lamb)
Mandi is a traditional Omani dish that features spiced rice and tender lamb, cooked to perfection. This flavorful and aromatic dish is a staple in Omani cuisine, and it's perfect for special occasions or family gatherings.
Ingredients
- 2 cups basmati rice
- 1.5 lbs lamb, cut into pieces
- 2 onions, sliced
- 4 cloves garlic, minced
- 2 tablespoons Mandi spice mix
- 1/4 cup ghee
- 4 cups chicken broth
- Salt to taste
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- In a large pot, heat the ghee over medium heat. Add the sliced onions and cook until golden brown.
- Add the minced garlic and Mandi spice mix to the pot, and cook for 2 minutes.
- Add the lamb pieces to the pot and brown them on all sides.
- Pour in the chicken broth and bring to a boil. Reduce the heat, cover, and simmer for 1.5 hours until the lamb is tender.
- Remove the lamb from the pot and set aside. Strain the broth and reserve it for cooking the rice.
- In a separate pot, bring the strained broth to a boil. Add the soaked rice and salt, then cover and cook over low heat for 20 minutes.
- Arrange the cooked lamb pieces on top of the rice, cover, and let it steam for an additional 10 minutes.
- Fluff the rice with a fork and serve the Mandi hot.
