Ingredients

  • 2 cups basmati rice
  • 1 pound shrimp, peeled and deveined
  • 2 onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons Mandi spice mix
  • 4 cups chicken broth
  • 1/4 cup vegetable oil
  • Salt to taste

Instructions

  1. Rinse the basmati rice until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat the vegetable oil over medium heat and sauté the onions and garlic until golden brown.
  3. Add the shrimp to the pot and cook until they turn pink, then remove and set aside.
  4. Stir in the Mandi spice mix and cook for 1-2 minutes until fragrant.
  5. Drain the soaked rice and add it to the pot, stirring to coat it with the spices.
  6. Pour in the chicken broth, season with salt, and bring to a boil.
  7. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  8. Fluff the rice with a fork and arrange the cooked shrimp on top.
