Mandi is a traditional Omani dish that features spiced rice and succulent shrimp, creating a flavorful and aromatic meal.
Ingredients
- 2 cups basmati rice
- 1 pound shrimp, peeled and deveined
- 2 onions, thinly sliced
- 4 cloves garlic, minced
- 2 tablespoons Mandi spice mix
- 4 cups chicken broth
- 1/4 cup vegetable oil
- Salt to taste
Instructions
- Rinse the basmati rice until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the vegetable oil over medium heat and sauté the onions and garlic until golden brown.
- Add the shrimp to the pot and cook until they turn pink, then remove and set aside.
- Stir in the Mandi spice mix and cook for 1-2 minutes until fragrant.
- Drain the soaked rice and add it to the pot, stirring to coat it with the spices.
- Pour in the chicken broth, season with salt, and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and arrange the cooked shrimp on top.
- Serve the Mandi hot and enjoy!
