Mandi (omani Spiced Rice With Shrimp And Mango)
Mandi is a traditional Omani dish that features spiced rice, succulent shrimp, and sweet mango. This flavorful and aromatic dish is a perfect representation of Omani cuisine.
Ingredients
- 2 cups basmati rice
- 1 pound shrimp, peeled and deveined
- 1 ripe mango, diced
- 2 onions, thinly sliced
- 4 cloves garlic, minced
- 2 tablespoons mandi spice mix
- 4 cups chicken broth
- 1/4 cup vegetable oil
- Salt to taste
Instructions
- Rinse the rice under cold water until the water runs clear. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until golden brown.
- Add the minced garlic and mandi spice mix to the pot. Cook for 1-2 minutes until fragrant.
- Add the shrimp to the pot and cook until they turn pink and opaque. Remove the shrimp and set aside.
- Stir in the rice and coat it with the onion and spice mixture.
- Pour in the chicken broth and season with salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and gently fold in the cooked shrimp and diced mango.
- Let the mandi rest for a few minutes before serving.
