Ingredients

  • 2 cups basmati rice
  • 1 pound shrimp, peeled and deveined
  • 1 ripe mango, diced
  • 2 onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons mandi spice mix
  • 4 cups chicken broth
  • 1/4 cup vegetable oil
  • Salt to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until golden brown.
  3. Add the minced garlic and mandi spice mix to the pot. Cook for 1-2 minutes until fragrant.
  4. Add the shrimp to the pot and cook until they turn pink and opaque. Remove the shrimp and set aside.
  5. Stir in the rice and coat it with the onion and spice mixture.
  6. Pour in the chicken broth and season with salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  7. Fluff the rice with a fork and gently fold in the cooked shrimp and diced mango.
  8. Let the mandi rest for a few minutes before serving.
