Ingredients

  • 2 cups basmati rice
  • 1 pound shrimp, peeled and deveined
  • 1 cup diced pineapple
  • 2 onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons mandi spice mix
  • 4 cups chicken broth
  • 1/4 cup vegetable oil
  • Salt to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until golden brown.
  2. Add the minced garlic and shrimp to the pot, and cook until the shrimp turn pink.
  3. Stir in the mandi spice mix and diced pineapple, and cook for 2 minutes.
  4. Add the basmati rice to the pot and stir to coat it with the spice mixture.
  5. Pour in the chicken broth, season with salt, and bring to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the rice is tender and the liquid is absorbed.
