Ingredients
- 2 cups basmati rice
- 1 pound shrimp, peeled and deveined
- 1 cup diced pineapple
- 2 onions, thinly sliced
- 4 cloves garlic, minced
- 2 tablespoons mandi spice mix
- 4 cups chicken broth
- 1/4 cup vegetable oil
- Salt to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until golden brown.
- Add the minced garlic and shrimp to the pot, and cook until the shrimp turn pink.
- Stir in the mandi spice mix and diced pineapple, and cook for 2 minutes.
- Add the basmati rice to the pot and stir to coat it with the spice mixture.
- Pour in the chicken broth, season with salt, and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and serve hot.
