Mandi (omani Spiced Rice With Shrimp And Vegetables)

Ingredients

  • 2 cups basmati rice
  • 1 pound shrimp, peeled and deveined
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons Mandi spice mix
  • 4 cups chicken broth
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  3. Add the shrimp to the pot and cook until they turn pink, then remove and set aside.
  4. Add the carrots, bell pepper, and garlic to the pot and sauté for 5 minutes.
  5. Stir in the Mandi spice mix and cook for another 2 minutes.
  6. Add the rice to the pot and stir to coat it with the vegetables and spices.
  7. Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.
  8. Fluff the rice with a fork and gently fold in the cooked shrimp.
  9. Remove from heat and let it sit, covered, for 5 minutes before serving.
