Mandi (omani Spiced Rice With Shrimp And Vegetables)
Mandi is a traditional Omani dish that features spiced rice, succulent shrimp, and a variety of vegetables. This flavorful and aromatic dish is a staple in Omani cuisine and is perfect for a special family dinner or gathering.
Ingredients
- 2 cups basmati rice
- 1 pound shrimp, peeled and deveined
- 1 onion, finely chopped
- 2 carrots, diced
- 1 bell pepper, sliced
- 3 cloves garlic, minced
- 2 tablespoons Mandi spice mix
- 4 cups chicken broth
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
- Add the shrimp to the pot and cook until they turn pink, then remove and set aside.
- Add the carrots, bell pepper, and garlic to the pot and sauté for 5 minutes.
- Stir in the Mandi spice mix and cook for another 2 minutes.
- Add the rice to the pot and stir to coat it with the vegetables and spices.
- Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.
- Fluff the rice with a fork and gently fold in the cooked shrimp.
- Remove from heat and let it sit, covered, for 5 minutes before serving.
