Ingredients
- 1 whole chicken, cut into pieces
- 2 cups basmati rice
- 4 cups chicken broth
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground cardamom
- 1 teaspoon ground cinnamon
- Salt to taste
- Black pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Rinse the rice under cold water until the water runs clear, then soak the rice in water for 30 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and minced garlic, and cook until softened.
- Add the chicken pieces to the pot and brown on all sides.
- Stir in the ground cumin, coriander, turmeric, cardamom, and cinnamon, coating the chicken evenly with the spices.
- Drain the soaked rice and add it to the pot, stirring to combine with the chicken and spices.
- Pour in the chicken broth, season with salt and black pepper, and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30-40 minutes, or until the chicken is cooked through and the rice is tender.
- Once cooked, remove the pot from the heat and let it rest for 10 minutes before serving.
