Mandioca Fries With Chimichurri

Ingredients

  • 2 large mandiocas (cassava), peeled and cut into fries
  • 2 tablespoons olive oil
  • Salt to taste
  • 1 cup fresh parsley, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the mandioca fries with 2 tablespoons of olive oil and salt to taste.
  3. Spread the fries in a single layer on a baking sheet and bake for 20-25 minutes, or until golden and crispy, flipping halfway through.
