Mangalore Bonda (goli Baje)
Mangalore Bonda, also known as Goli Baje, is a popular snack from the coastal region of Karnataka, India. These crispy and fluffy fritters are made with a fermented batter and are best enjoyed with a cup of hot tea.
Ingredients
- 1 cup all-purpose flour
- 1/4 cup rice flour
- 1/2 cup yogurt
- 1/2 inch ginger, grated
- 2-3 green chilies, finely chopped
- 1/4 teaspoon asafoetida (hing)
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon baking soda
- Salt to taste
- Oil for deep frying
Instructions
- In a mixing bowl, combine all-purpose flour, rice flour, yogurt, ginger, green chilies, asafoetida, cumin seeds, baking soda, and salt. Mix well to form a thick batter.
- Heat oil in a deep pan over medium heat.
- Scoop small portions of the batter using a spoon and carefully drop them into the hot oil.
- Fry the bondas until they turn golden brown and crispy.
- Remove the bondas from the oil and place them on a paper towel to drain excess oil.
- Serve hot with chutney or a cup of tea.
