Mangalorean Chicken Biryani

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 2 green chilies, slit
  • 1/4 cup mint leaves
  • 1/4 cup coriander leaves
  • 1/4 cup ghee
  • 1/4 cup oil
  • 1 cinnamon stick
  • 4 cloves
  • 4 cardamom pods
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 tablespoon biryani masala
  • Salt to taste
  • 4 cups water

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat ghee and oil. Add the cinnamon, cloves, cardamom, and cumin seeds. Sauté until fragrant.
  3. Add the sliced onions and sauté until golden brown.
  4. Now add the chicken pieces, turmeric powder, red chili powder, biryani masala, and salt. Cook until the chicken is browned.
  5. Stir in the chopped tomatoes, green chilies, mint leaves, and coriander leaves. Cook for a few minutes until the tomatoes are soft.
  6. Whisk the yogurt and pour it into the pot. Mix well and cook for another 5 minutes.
  7. Meanwhile, in a separate pot, bring 4 cups of water to a boil. Add the soaked and drained rice. Cook until the rice is 70% done. Drain and set aside.
  8. Layer the partially cooked rice over the chicken masala in the pot. Cover and cook on low heat for 10-15 minutes until the rice is fully cooked and the flavors are infused.
  9. Gently fluff the biryani with a fork and serve hot.
