Mangalorean Chicken Biryani
Mangalorean Chicken Biryani is a flavorful and aromatic dish from the Dakshina Karnataka Cuisine. This biryani is known for its unique blend of spices and tender chicken pieces, making it a favorite among biryani lovers.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 2 green chilies, slit
- 1/4 cup mint leaves
- 1/4 cup coriander leaves
- 1/4 cup ghee
- 1/4 cup oil
- 1 cinnamon stick
- 4 cloves
- 4 cardamom pods
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 1 tablespoon biryani masala
- Salt to taste
- 4 cups water
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- In a large pot, heat ghee and oil. Add the cinnamon, cloves, cardamom, and cumin seeds. Sauté until fragrant.
- Add the sliced onions and sauté until golden brown.
- Now add the chicken pieces, turmeric powder, red chili powder, biryani masala, and salt. Cook until the chicken is browned.
- Stir in the chopped tomatoes, green chilies, mint leaves, and coriander leaves. Cook for a few minutes until the tomatoes are soft.
- Whisk the yogurt and pour it into the pot. Mix well and cook for another 5 minutes.
- Meanwhile, in a separate pot, bring 4 cups of water to a boil. Add the soaked and drained rice. Cook until the rice is 70% done. Drain and set aside.
- Layer the partially cooked rice over the chicken masala in the pot. Cover and cook on low heat for 10-15 minutes until the rice is fully cooked and the flavors are infused.
- Gently fluff the biryani with a fork and serve hot.
