Ingredients

  • 500g mutton, cut into pieces
  • 2 cups basmati rice
  • 4 onions, thinly sliced
  • 1/2 cup yogurt
  • 4 tomatoes, chopped
  • 2 tbsp ginger-garlic paste
  • Whole spices (cinnamon, cardamom, cloves)
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped coriander leaves
  • 2 green chilies, slit
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp biryani masala
  • 1/2 cup ghee
  • Salt to taste
  • Saffron strands soaked in milk

Instructions

  1. Marinate the mutton with yogurt, ginger-garlic paste, turmeric powder, red chili powder, biryani masala, mint leaves, coriander leaves, and salt. Let it sit for 1 hour.
  2. Soak the basmati rice in water for 30 minutes, then drain.
  3. In a large pot, heat ghee and add the sliced onions. Fry until golden brown.
  4. Add the marinated mutton and cook until the meat is tender.
  5. Layer the cooked mutton with the soaked rice in the pot. Sprinkle saffron milk on top.
  6. Cover and cook on low heat until the rice is done.
  7. Garnish with fried onions and serve hot.
