Mangalorean Style (mutton Biryani)

Ingredients
- 500g mutton, cut into pieces
- 2 cups basmati rice
- 4 onions, thinly sliced
- 1/2 cup yogurt
- 4 tomatoes, chopped
- 2 tbsp ginger-garlic paste
- Whole spices (cinnamon, cardamom, cloves)
- 1/4 cup chopped mint leaves
- 1/4 cup chopped coriander leaves
- 2 green chilies, slit
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp biryani masala
- 1/2 cup ghee
- Salt to taste
- Saffron strands soaked in milk
Instructions
- Marinate the mutton with yogurt, ginger-garlic paste, turmeric powder, red chili powder, biryani masala, mint leaves, coriander leaves, and salt. Let it sit for 1 hour.
- Soak the basmati rice in water for 30 minutes, then drain.
- In a large pot, heat ghee and add the sliced onions. Fry until golden brown.
- Add the marinated mutton and cook until the meat is tender.
- Layer the cooked mutton with the soaked rice in the pot. Sprinkle saffron milk on top.
- Cover and cook on low heat until the rice is done.
- Garnish with fried onions and serve hot.
