Mange Curry, also known as Bamboo Shoot Curry, is a traditional dish from Kodava Cuisine, a unique and flavorful cuisine from the Kodagu district in Karnataka, India. This curry is made with tender bamboo shoots and a blend of aromatic spices, creating a delicious and comforting dish.

Mange Curry (bamboo Shoot Curry)

Ingredients

  • 500g tender bamboo shoots, peeled and chopped
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1/2 cup grated coconut
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • 2-3 green chilies, slit lengthwise
  • A handful of curry leaves
  • Salt to taste
  • 2 tbsp oil
  • 2 cups water

Instructions

  1. Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds and curry leaves.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add tomatoes and cook until they turn mushy.
  4. Add the chopped bamboo shoots and sauté for a few minutes.
  5. Now add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  6. Pour water and cook the bamboo shoots until they turn tender.
  7. Add grated coconut and garam masala. Mix well and simmer for a few minutes.
  8. Once the curry reaches the desired consistency, remove from heat and serve hot with steamed rice or roti.
