Mange Curry (bamboo Shoot Curry)
Mange Curry, also known as Bamboo Shoot Curry, is a traditional dish from Kodava Cuisine, a unique and flavorful cuisine from the Kodagu district in Karnataka, India. This curry is made with tender bamboo shoots and a blend of aromatic spices, creating a delicious and comforting dish.
Ingredients
- 500g tender bamboo shoots, peeled and chopped
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1/2 cup grated coconut
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tsp coriander powder
- 1/2 tsp garam masala
- 2-3 green chilies, slit lengthwise
- A handful of curry leaves
- Salt to taste
- 2 tbsp oil
- 2 cups water
Instructions
- Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds and curry leaves.
- Add chopped onions and sauté until they turn golden brown.
- Add tomatoes and cook until they turn mushy.
- Add the chopped bamboo shoots and sauté for a few minutes.
- Now add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Pour water and cook the bamboo shoots until they turn tender.
- Add grated coconut and garam masala. Mix well and simmer for a few minutes.
- Once the curry reaches the desired consistency, remove from heat and serve hot with steamed rice or roti.
