Mango And Lime Cheesecake

Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup mango puree
- 1/4 cup fresh lime juice
- 1 tbsp lime zest
- 1 cup heavy cream
- 1/4 cup granulated sugar
Instructions
- In a bowl, mix graham cracker crumbs with melted butter. Press the mixture into the bottom of a 9-inch springform pan. Chill in the refrigerator while preparing the filling.
- In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth. Add mango puree, lime juice, and lime zest. Mix until well combined.
- In a separate bowl, whip the heavy cream and granulated sugar until stiff peaks form. Gently fold the whipped cream into the mango and cream cheese mixture.
- Pour the filling over the chilled crust and smooth the top with a spatula. Refrigerate for at least 4 hours or until set.
- Before serving, garnish with additional mango slices and lime zest if desired.
