Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup mango puree
  • 1/4 cup fresh lime juice
  • 1 tbsp lime zest
  • 1 cup heavy cream
  • 1/4 cup granulated sugar

Instructions

  1. In a bowl, mix graham cracker crumbs with melted butter. Press the mixture into the bottom of a 9-inch springform pan. Chill in the refrigerator while preparing the filling.
  2. In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth. Add mango puree, lime juice, and lime zest. Mix until well combined.
  3. In a separate bowl, whip the heavy cream and granulated sugar until stiff peaks form. Gently fold the whipped cream into the mango and cream cheese mixture.
  4. Pour the filling over the chilled crust and smooth the top with a spatula. Refrigerate for at least 4 hours or until set.
  5. Before serving, garnish with additional mango slices and lime zest if desired.
