Mango And Papaya Salsa With Lime-glazed Prawns

Ingredients

  • 1 ripe mango, diced
  • 1 ripe papaya, diced
  • 1/2 red onion, finely chopped
  • 1 red chili, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 pound large prawns, peeled and deveined
  • 2 limes, juiced and zested
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a bowl, combine the diced mango, papaya, red onion, red chili, cilantro, and half of the lime juice. Season with salt and pepper, then mix well. Set aside.
  2. In a separate bowl, mix the prawns with the remaining lime juice, lime zest, salt, and pepper.
