Ingredients

  • 6 egg whites
  • 1 1/2 cups white sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 1 cup heavy cream
  • 2 ripe mangoes, peeled and diced
  • 4 passionfruits, pulp scooped out

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the egg whites until stiff peaks form.
  3. Gradually add the sugar, vanilla extract, vinegar, and cornstarch while continuing to beat until the mixture is glossy.
  4. Spoon the meringue onto the prepared baking sheet, forming a circle with slightly raised edges.
  5. Bake for 1 hour, then turn off the oven and let the pavlova cool inside for another hour.
  6. Whip the heavy cream until soft peaks form.
  7. Spread the whipped cream over the cooled pavlova, then top with diced mangoes and passionfruit pulp.
