Mango Bbq Pulled Pork Sliders

Ingredients

  • 3 lbs pork shoulder, trimmed of excess fat and cut into large chunks
  • 1 cup mango puree
  • 1/2 cup BBQ sauce
  • 1/4 cup brown sugar
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 12 slider buns
  • 1 cup coleslaw (optional, for serving)

Instructions

  1. In a slow cooker, combine the mango puree, BBQ sauce, brown sugar, onion, garlic, cumin, paprika, cayenne pepper, salt, and pepper. Stir to combine.
  2. Add the pork shoulder chunks to the slow cooker and toss to coat with the mango BBQ sauce mixture.
  3. Cover and cook on low for 8 hours or on high for 4 hours, until the pork is tender and easily shreds with a fork.
  4. Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and stir to coat it with the remaining sauce.
  5. Toast the slider buns in a skillet or in the oven until lightly golden.
  6. Assemble the sliders by placing a generous amount of the mango BBQ pulled pork on each bun. Top with coleslaw if desired.
