Mango Coconut Cheesecake Bars

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup mango puree
  • 1/2 cup sweetened shredded coconut, toasted

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper.
  2. In a bowl, mix the graham cracker crumbs, unsweetened shredded coconut, and melted butter. Press the mixture into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the mango puree until fully incorporated.
  4. Pour the cream cheese mixture over the crust in the pan. Sprinkle the toasted sweetened shredded coconut on top.
  5. Bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly. Allow to cool at room temperature, then refrigerate for at least 4 hours before cutting into bars.
