Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsweetened shredded coconut
- 1/2 cup butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 cup mango puree
- 1/2 cup sweetened shredded coconut, toasted
Instructions
- Preheat the oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper.
- In a bowl, mix the graham cracker crumbs, unsweetened shredded coconut, and melted butter. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the mango puree until fully incorporated.
- Pour the cream cheese mixture over the crust in the pan. Sprinkle the toasted sweetened shredded coconut on top.
- Bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly. Allow to cool at room temperature, then refrigerate for at least 4 hours before cutting into bars.
