Ingredients
- 4 salmon fillets
- 1 ripe mango, peeled and diced
- 1 habanero pepper, seeded and minced
- 2 tablespoons soy sauce

- 1 tablespoon rice vinegar

- Salt and pepper to taste
Instructions
- In a small saucepan, combine the diced mango, minced habanero pepper, soy sauce, honey, rice vinegar, and grated ginger. Cook over medium heat for 5-7 minutes, stirring occasionally, until the mango breaks down and the sauce thickens. Season with salt and pepper to taste.
- Season the salmon fillets with salt and pepper. In a large skillet, heat some oil over medium-high heat. Add the salmon fillets, skin side down, and cook for 3-4 minutes until the skin is crispy.
