Mango Habanero Glazed Salmon

Ingredients

  • 4 salmon fillets
  • 1 ripe mango, peeled and diced
  • 1 habanero pepper, seeded and minced
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • Salt and pepper to taste

Instructions

  1. In a small saucepan, combine the diced mango, minced habanero pepper, soy sauce, honey, rice vinegar, and grated ginger. Cook over medium heat for 5-7 minutes, stirring occasionally, until the mango breaks down and the sauce thickens. Season with salt and pepper to taste.
