Mango Kuchela Kick

Ingredients

  • 4 ripe mangoes, peeled and grated
  • 4 scotch bonnet peppers, finely chopped
  • 1 tablespoon mustard seeds
  • 1 tablespoon cumin seeds
  • 1 tablespoon turmeric
  • 1 tablespoon salt
  • 1/2 cup white vinegar

Instructions

  1. In a large bowl, combine the grated mangoes and chopped scotch bonnet peppers.
  2. In a small pan, dry roast the mustard seeds and cumin seeds until fragrant.
  3. Grind the roasted seeds into a fine powder using a mortar and pestle.
  4. Add the ground spices, turmeric, salt, and white vinegar to the mango and pepper mixture. Mix well.
  5. Transfer the mixture to a clean, sterilized jar and let it sit at room temperature for 2-3 days to allow the flavors to meld together.
  6. Store in the refrigerator for up to 3 months.
