Mango Kuku (malakal Mango Chicken)
Mango Kuku, also known as Malakal Mango Chicken, is a popular dish in South Sudanese cuisine. This flavorful and aromatic chicken dish is made with ripe mangoes, creating a perfect balance of sweet and savory flavors.
Ingredients
- 4 chicken thighs, bone-in and skin-on
- 2 ripe mangoes, peeled and diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish
Instructions
- Season the chicken thighs with salt, pepper, ground coriander, cumin, paprika, turmeric, and cayenne pepper.
- Heat vegetable oil in a large skillet over medium heat. Add the seasoned chicken thighs and cook until golden brown on both sides, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic. Sauté until the onion is soft and translucent.
- Add the diced mangoes to the skillet and cook for 5 minutes, mashing them slightly with a fork to release their juices.
- Return the browned chicken thighs to the skillet, nestling them into the mango mixture. Cover and simmer for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened.
- Garnish with fresh cilantro and serve the Mango Kuku hot with steamed rice or flatbread.
