Mango Kuku (malakal Mango Chicken)

Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 ripe mangoes, peeled and diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Season the chicken thighs with salt, pepper, ground coriander, cumin, paprika, turmeric, and cayenne pepper.
  2. Heat vegetable oil in a large skillet over medium heat. Add the seasoned chicken thighs and cook until golden brown on both sides, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and garlic. Sauté until the onion is soft and translucent.
  4. Add the diced mangoes to the skillet and cook for 5 minutes, mashing them slightly with a fork to release their juices.
  5. Return the browned chicken thighs to the skillet, nestling them into the mango mixture. Cover and simmer for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Garnish with fresh cilantro and serve the Mango Kuku hot with steamed rice or flatbread.
