Mango Masala Prawns

Ingredients
- 500g prawns, peeled and deveined
- 2 ripe mangoes, diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 tomato, chopped
- 2 green chilies, sliced
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- 1/4 cup fresh cilantro, chopped
- Salt to taste
- 2 tbsp oil
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add minced garlic, grated ginger, and green chilies. Sauté for a minute.
- Add chopped tomatoes and cook until they turn mushy.
- Add coriander powder, turmeric powder, red chili powder, and salt. Cook for 2 minutes.
- Add diced mangoes and cook until they soften and release their juices.
- Add prawns and cook for 5-7 minutes until they turn pink and are cooked through.
- Sprinkle garam masala and fresh cilantro. Mix well and cook for another minute.
- Remove from heat and serve hot with steamed rice or naan.
