Mango Masala Prawns

Ingredients

  • 500g prawns, peeled and deveined
  • 2 ripe mangoes, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 tomato, chopped
  • 2 green chilies, sliced
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste
  • 2 tbsp oil

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add minced garlic, grated ginger, and green chilies. Sauté for a minute.
  3. Add chopped tomatoes and cook until they turn mushy.
  4. Add coriander powder, turmeric powder, red chili powder, and salt. Cook for 2 minutes.
  5. Add diced mangoes and cook until they soften and release their juices.
  6. Add prawns and cook for 5-7 minutes until they turn pink and are cooked through.
  7. Sprinkle garam masala and fresh cilantro. Mix well and cook for another minute.
  8. Remove from heat and serve hot with steamed rice or naan.
