Ingredients

  • 2 ripe mangoes, peeled and diced
  • 1/2 cup grated coconut
  • 1 tablespoon jaggery (or brown sugar)
  • 1 lemon-sized ball of tamarind, soaked in 1/2 cup warm water
  • 4-5 dried red chilies
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon fenugreek seeds
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons oil
  • 1 sprig curry leaves

Instructions

  1. Heat oil in a pan and add mustard seeds. Once they splutter, add fenugreek seeds, dried red chilies, and curry leaves. Sauté for a minute.
  2. Add the diced mangoes, turmeric powder, and salt. Mix well and cook for 2-3 minutes.
  3. Extract the pulp from the soaked tamarind and add it to the pan along with the water. Cook for another 5 minutes.
  4. Add grated coconut and jaggery to the pan. Mix everything together and cook for 2-3 minutes until the flavors blend well.
  5. Remove from heat and let the curry cool down before serving.
