Ingredients

  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. In a large bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  2. Sprinkle 2-3 tablespoons of ice water over the mixture and gently stir with a fork until the dough comes together. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. In a separate bowl, combine the sliced mangoes, sugar, cornstarch, lemon juice, and vanilla extract. Toss until the mangoes are evenly coated.
  5. Roll out the chilled dough on a floured surface to fit a 9-inch pie dish. Place the dough in the dish and trim any excess overhang.
  6. Add the mango filling to the pie crust. Fold the edges of the crust over the filling, creating a rustic look.
  7. Brush the crust with the beaten egg wash.
  8. Bake the mango pie for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
