Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt

- 4-5 ripe mangoes, peeled and sliced

- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Sprinkle 2-3 tablespoons of ice water over the mixture and gently stir with a fork until the dough comes together. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- In a separate bowl, combine the sliced mangoes, sugar, cornstarch, lemon juice, and vanilla extract. Toss until the mangoes are evenly coated.
- Roll out the chilled dough on a floured surface to fit a 9-inch pie dish. Place the dough in the dish and trim any excess overhang.
- Add the mango filling to the pie crust. Fold the edges of the crust over the filling, creating a rustic look.
- Brush the crust with the beaten egg wash.
- Bake the mango pie for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
