Mansaf (damascus Lamb Stew)

Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 cups plain yogurt
  • 1 large onion, finely chopped
  • 1/4 cup ghee or clarified butter
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cloves
  • 3 cups long-grain rice
  • 1/4 cup slivered almonds, toasted
  • 1/4 cup pine nuts, toasted
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot, heat the ghee over medium heat. Add the chopped onion and cook until softened.
  2. Add the lamb chunks to the pot and brown on all sides.
  3. In a separate bowl, whisk together the yogurt, turmeric, cinnamon, cardamom, allspice, nutmeg, black pepper, and cloves.
  4. Pour the yogurt mixture over the lamb in the pot. Add enough water to cover the meat, then bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the lamb is tender.
  6. While the lamb is cooking, prepare the rice according to package instructions.
  7. Once the lamb is tender, remove it from the pot and set aside. Skim any excess fat from the surface of the sauce.
  8. To serve, place the cooked rice on a large serving platter. Arrange the lamb pieces on top of the rice, then pour the yogurt sauce over the lamb and rice.
  9. Sprinkle the toasted almonds and pine nuts over the dish, and garnish with chopped parsley.
