Mansaf (damascus Lamb Stew)
Mansaf is a traditional Syrian dish that consists of tender lamb cooked in a rich, flavorful yogurt sauce, served over fragrant rice and topped with toasted nuts and fresh herbs. This dish is often enjoyed during special occasions and gatherings, making it a true centerpiece of Syrian cuisine.
Ingredients
- 2 lbs lamb, cut into chunks
- 2 cups plain yogurt
- 1 large onion, finely chopped
- 1/4 cup ghee or clarified butter
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground cloves
- 3 cups long-grain rice
- 1/4 cup slivered almonds, toasted
- 1/4 cup pine nuts, toasted
- Fresh parsley, chopped, for garnish
Instructions
- In a large pot, heat the ghee over medium heat. Add the chopped onion and cook until softened.
- Add the lamb chunks to the pot and brown on all sides.
- In a separate bowl, whisk together the yogurt, turmeric, cinnamon, cardamom, allspice, nutmeg, black pepper, and cloves.
- Pour the yogurt mixture over the lamb in the pot. Add enough water to cover the meat, then bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the lamb is tender.
- While the lamb is cooking, prepare the rice according to package instructions.
- Once the lamb is tender, remove it from the pot and set aside. Skim any excess fat from the surface of the sauce.
- To serve, place the cooked rice on a large serving platter. Arrange the lamb pieces on top of the rice, then pour the yogurt sauce over the lamb and rice.
- Sprinkle the toasted almonds and pine nuts over the dish, and garnish with chopped parsley.
