Mansaf Majesty (منسف مهيب)

Ingredients

  • 1.5 kg lamb, cut into pieces
  • 2 cups plain yogurt
  • 1 onion, finely chopped
  • 1/4 cup ghee or clarified butter
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • Salt to taste
  • 3 cups long-grain rice
  • 1/2 cup slivered almonds, toasted
  • 1/2 cup pine nuts, toasted
  • Fresh parsley and/or mint for garnish

Instructions

  1. In a large pot, brown the lamb pieces in ghee over medium heat.
  2. Add the chopped onion and continue cooking until the onion is soft and translucent.
  3. In a separate bowl, mix the yogurt with the spices and a bit of water to thin it out.
  4. Pour the yogurt mixture over the lamb, reduce the heat, and let it simmer for about 1.5 hours, or until the lamb is tender.
  5. While the lamb is cooking, prepare the rice according to package instructions.
  6. To serve, arrange the rice on a large platter, top with the lamb and yogurt sauce, and sprinkle with the toasted nuts and fresh herbs.
