Mansaf Stuffed Artichokes (خرشوف محشو بالمنسف)
Mansaf Stuffed Artichokes is a unique and delicious Palestinian dish that combines the flavors of mansaf with the tender artichoke hearts. This recipe is perfect for a special occasion or when you want to impress your guests with a traditional Palestinian dish.
Ingredients
- 4 large artichokes
- 500g lamb, cut into cubes
- 2 cups Greek yogurt
- 1 cup rice
- 1/2 cup slivered almonds
- 1/4 cup chopped fresh parsley
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
- Water
- Vegetable oil
Instructions
- Prepare the artichokes by removing the tough outer leaves and trimming the tops. Scoop out the choke to create a hollow center.
- In a bowl, mix the yogurt with the spices and set aside.
- Heat some vegetable oil in a large pot and brown the lamb cubes. Add water to cover the meat and simmer until tender.
- Remove the meat from the pot and set aside. In the same pot, add the rice to the lamb broth and cook until tender.
- Stir in the yogurt mixture and return the meat to the pot. Simmer for a few minutes until the flavors are combined.
- Stuff the artichoke hearts with the rice and meat mixture.
- Place the stuffed artichokes in the pot with the remaining rice and meat mixture. Add more water if needed.
- Cover and cook over low heat for about 30 minutes, or until the artichokes are tender.
- In a separate pan, toast the slivered almonds until golden brown.
- Once the artichokes are cooked, transfer them to a serving dish and top with the toasted almonds and chopped parsley.
