Mansaf Stuffed Artichokes (خرشوف محشو بالمنسف)

Ingredients

  • 4 large artichokes
  • 500g lamb, cut into cubes
  • 2 cups Greek yogurt
  • 1 cup rice
  • 1/2 cup slivered almonds
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • Water
  • Vegetable oil

Instructions

  1. Prepare the artichokes by removing the tough outer leaves and trimming the tops. Scoop out the choke to create a hollow center.
  2. In a bowl, mix the yogurt with the spices and set aside.
  3. Heat some vegetable oil in a large pot and brown the lamb cubes. Add water to cover the meat and simmer until tender.
  4. Remove the meat from the pot and set aside. In the same pot, add the rice to the lamb broth and cook until tender.
  5. Stir in the yogurt mixture and return the meat to the pot. Simmer for a few minutes until the flavors are combined.
  6. Stuff the artichoke hearts with the rice and meat mixture.
  7. Place the stuffed artichokes in the pot with the remaining rice and meat mixture. Add more water if needed.
  8. Cover and cook over low heat for about 30 minutes, or until the artichokes are tender.
  9. In a separate pan, toast the slivered almonds until golden brown.
  10. Once the artichokes are cooked, transfer them to a serving dish and top with the toasted almonds and chopped parsley.
