Mansaf Stuffed Bell Pepper Boats (فلفل محشي بالمنسف)
This recipe combines the flavors of Jordanian cuisine with a creative twist, using bell peppers as boats to hold the delicious Mansaf filling. It's a unique and impressive dish that's perfect for special occasions or family gatherings.
Ingredients
- 4 large bell peppers
- 1 cup rice
- 500g lamb, cubed
- 1 cup plain yogurt
- 1/2 cup pine nuts
- 1/4 cup chopped parsley
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 cups water
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the rice, cubed lamb, yogurt, pine nuts, parsley, turmeric, cinnamon, cardamom, salt, and pepper.
- Stuff the bell peppers with the rice and lamb mixture.
- Place the stuffed peppers in a baking dish and drizzle with olive oil.
- Pour the water into the bottom of the baking dish.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the filling is cooked through.
- Serve the Mansaf stuffed bell pepper boats hot, garnished with additional parsley if desired.
