Mansaf Stuffed Bell Pepper Boats (فلفل محشي بالمنسف)

Ingredients

  • 4 large bell peppers
  • 1 cup rice
  • 500g lamb, cubed
  • 1 cup plain yogurt
  • 1/2 cup pine nuts
  • 1/4 cup chopped parsley
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cups water

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the rice, cubed lamb, yogurt, pine nuts, parsley, turmeric, cinnamon, cardamom, salt, and pepper.
  4. Stuff the bell peppers with the rice and lamb mixture.
  5. Place the stuffed peppers in a baking dish and drizzle with olive oil.
  6. Pour the water into the bottom of the baking dish.
  7. Cover the dish with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the filling is cooked through.
  9. Serve the Mansaf stuffed bell pepper boats hot, garnished with additional parsley if desired.
