Mansaf Stuffed Chicken Breast (صدر دجاج محشي بالمنسف)

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cooked rice
  • 1 cup plain yogurt
  • 1/2 cup toasted pine nuts
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly the chicken breasts and pound them to an even thickness.
  3. In a bowl, mix together the cooked rice, yogurt, pine nuts, parsley, cardamom, cinnamon, salt, and pepper.
  4. Spoon the rice mixture onto the center of each chicken breast and roll them up, securing with toothpicks if needed.
  5. Place the stuffed chicken breasts in a baking dish and bake for 30-35 minutes, or until the chicken is cooked through.
  6. Remove the toothpicks and serve the Mansaf stuffed chicken breasts hot.
