Mansaf Stuffed Chicken Breast (صدر دجاج محشي بالمنسف)
This recipe combines the flavors of Mansaf, a traditional Jordanian dish, with tender chicken breast for a delicious and unique main course.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup cooked rice
- 1 cup plain yogurt
- 1/2 cup toasted pine nuts
- 1/4 cup chopped fresh parsley
- 1 teaspoon ground cardamom
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Butterfly the chicken breasts and pound them to an even thickness.
- In a bowl, mix together the cooked rice, yogurt, pine nuts, parsley, cardamom, cinnamon, salt, and pepper.
- Spoon the rice mixture onto the center of each chicken breast and roll them up, securing with toothpicks if needed.
- Place the stuffed chicken breasts in a baking dish and bake for 30-35 minutes, or until the chicken is cooked through.
- Remove the toothpicks and serve the Mansaf stuffed chicken breasts hot.
