Mansaf Stuffed Mushrooms (فطر محشي بالمنسف)
This recipe combines the flavors of Mansaf, a traditional Jordanian dish, with the earthy taste of mushrooms to create a unique and delicious appetizer or side dish.
Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 cup cooked rice
- 1 cup cooked lamb, shredded
- 1 cup plain yogurt
- 2 cups chicken broth
- 1/4 cup pine nuts, toasted
- 1/4 cup chopped fresh parsley
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cardamom
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Chop the reserved mushroom stems and sauté them in a pan until softened.
- In a bowl, mix the cooked rice, shredded lamb, sautéed mushroom stems, yogurt, half of the toasted pine nuts, parsley, cumin, coriander, cardamom, salt, and pepper.
- Stuff the mushroom caps with the rice and lamb mixture.
- Place the stuffed mushrooms in a baking dish and pour the chicken broth around them.
- Bake for 20-25 minutes, or until the mushrooms are tender and the filling is heated through.
- Serve the stuffed mushrooms topped with the remaining toasted pine nuts.
