Mansaf Stuffed Peppers (فلفل محشو بالمنسف)

Ingredients

  • 4 large bell peppers
  • 1 cup rice
  • 500g lamb meat, diced
  • 1 cup plain yogurt
  • 1/2 cup pine nuts
  • 1/4 cup chopped parsley
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups water

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the rice, diced lamb, yogurt, pine nuts, parsley, turmeric, cumin, cinnamon, salt, and pepper.
  4. Stuff the bell peppers with the rice and lamb mixture.
  5. Place the stuffed peppers in a deep pot and drizzle with olive oil.
  6. Pour water into the pot, covering the peppers.
  7. Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the peppers are tender and the filling is cooked through.
  8. Transfer the stuffed peppers to a serving dish and spoon the cooking liquid over them.
  9. Serve hot and enjoy!
