Mansaf Stuffed Peppers (فلفل محشو بالمنسف)
Mansaf Stuffed Peppers is a delicious and unique twist on the traditional Palestinian dish, Mansaf. This recipe combines the flavors of Mansaf with the presentation of stuffed peppers, creating a delightful and impressive dish.
Ingredients
- 4 large bell peppers
- 1 cup rice
- 500g lamb meat, diced
- 1 cup plain yogurt
- 1/2 cup pine nuts
- 1/4 cup chopped parsley
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cups water
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the rice, diced lamb, yogurt, pine nuts, parsley, turmeric, cumin, cinnamon, salt, and pepper.
- Stuff the bell peppers with the rice and lamb mixture.
- Place the stuffed peppers in a deep pot and drizzle with olive oil.
- Pour water into the pot, covering the peppers.
- Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the peppers are tender and the filling is cooked through.
- Transfer the stuffed peppers to a serving dish and spoon the cooking liquid over them.
- Serve hot and enjoy!
