Mansaf Stuffed Tomatoes (طماطم محشية بالمنسف)
طماطم محشية بالمنسف (Mansaf Stuffed Tomatoes) is a traditional Jordanian dish that combines the flavors of stuffed tomatoes with the rich and aromatic flavors of mansaf, a popular Jordanian rice and lamb dish.
Ingredients
- 4 large tomatoes
- 500g ground lamb
- 1 cup rice
- 1/2 cup slivered almonds
- 1/2 cup plain yogurt
- 1/4 cup ghee or clarified butter
- 1 onion, finely chopped
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- 1 teaspoon ground allspice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 180°C (350°F).
- Cut the tops off the tomatoes and scoop out the pulp, leaving a sturdy shell. Sprinkle the insides with salt and set aside.
- In a large bowl, mix the ground lamb, rice, slivered almonds, yogurt, ghee, onion, and spices. Season with salt and pepper.
- Stuff the tomato shells with the lamb and rice mixture.
- Place the stuffed tomatoes in a baking dish and bake for 45-50 minutes, or until the tomatoes are tender and the filling is cooked through.
- While the tomatoes are baking, prepare the mansaf sauce by mixing the yogurt with a bit of water to reach a saucy consistency. Season with salt to taste.
- Once the stuffed tomatoes are done, remove them from the oven and let them cool for a few minutes.
- Place the stuffed tomatoes on a serving platter and pour the mansaf sauce over them.
- Garnish with fresh parsley and serve hot.
