طماطم محشية بالمنسف (Mansaf Stuffed Tomatoes) is a traditional Jordanian dish that combines the flavors of stuffed tomatoes with the rich and aromatic flavors of mansaf, a popular Jordanian rice and lamb dish.

Mansaf Stuffed Tomatoes (طماطم محشية بالمنسف)

Ingredients

  • 4 large tomatoes
  • 500g ground lamb
  • 1 cup rice
  • 1/2 cup slivered almonds
  • 1/2 cup plain yogurt
  • 1/4 cup ghee or clarified butter
  • 1 onion, finely chopped
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground allspice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the tomatoes and scoop out the pulp, leaving a sturdy shell. Sprinkle the insides with salt and set aside.
  3. In a large bowl, mix the ground lamb, rice, slivered almonds, yogurt, ghee, onion, and spices. Season with salt and pepper.
  4. Stuff the tomato shells with the lamb and rice mixture.
  5. Place the stuffed tomatoes in a baking dish and bake for 45-50 minutes, or until the tomatoes are tender and the filling is cooked through.
  6. While the tomatoes are baking, prepare the mansaf sauce by mixing the yogurt with a bit of water to reach a saucy consistency. Season with salt to taste.
  7. Once the stuffed tomatoes are done, remove them from the oven and let them cool for a few minutes.
  8. Place the stuffed tomatoes on a serving platter and pour the mansaf sauce over them.
  9. Garnish with fresh parsley and serve hot.
